Erica has been a creative soul since she could remember. Always approaching new moments in life through a visual connection. Creating art through painting, drawing & graphic design. It was when she found cakes that she truly found a love.
When the popularity of custom cakes began to take over the culinary world, Erica was extremely intrigued and knew it was a challenge she could take on. Could she create beautiful art through cakes as well? And, Yes she could.
With always baking to satisfy her sweet tooth, it wasn’t far from her skills to artistically create her treats into works of art. Erica started designed and creating cakes since 2010, when she began a job as a cake decorator at CMNY Cakes of New York. She quickly went from baker… to cake decorator and then… to lead artist.

a.k.a. "Tall Cakes"
She then expanded her baking skills by combining her design skills and working with high end Italian Bakeries on Long Island, New York. She eventually branched out on her own, working under the name of Tall Cake Designs. She was originally given the nickname of “Tall Cakes” from her best friend, because of her new direction in the art world and the fact that she is 6 feet tall.
Erica owned and operated Tall Cake Designs for almost 4 years on Long Island, NY. She eventually moved on to expand her skills at a few high end cake shops in Austin, TX. Always dreaming of exploring new creative cities she decided to take her business to Memphis, TN. She quickly fell in love with the city and has been growing and expanding her skills ever since.
